During the summer the vineyards are checked regularly and around the grape maturation period, twice weekly by the Dragon Seal winemakers and viticulturists to ensure that the correct harvesting date is chosen. The grape harvest occurs in the Autumn, from mid September to late October. The grapes are all handpicked, carefully placed in 18kg bins without any crushing and quickly transported by truck to the winery in Beijing some 80 kilometers to the South to be processed. Every year about 2000-2500 tonnes of red grapes are harvested and 300-500 tonnes of white grapes for Dragon Seal at the winery in Beijing. In addition to this Dragon Seal also produces wines for Zhonghua and Noctilucent Cup wines. All of the wines are made to exacting international standards under the supervision of the resident French winemaker, Jerome Sabate, with the assistance of a team of experienced Chinese winemakers. The goal is to produce authentic wines that reflect the best of the natural flavours and intensity of the grapes. The wineries stainless steel tanks are imported from Bordeaux in France and are all temperature controlled to control the fermentation process. The various sizes allow a separate vinification of each batch of grapes collected from the different villages and vineyards that supply the winery. The winemaking techniques are adapted to match each batch. The other winemaking equipment such as press machines, pumps, filters, pipes and bottling plant are also imported from other renowned wine making countries to ensure that the high level of technical control is maintained throughout the whole process from grape to glass. The best wines in the range are matured in oak barrels. Dragon Seal has two cellars full of hundreds of casks and use a mixture of French and American Oak.
