The soil in the vineyards is predominantly sand and stone in composition, low in natural organic content and well drained.

Located on the hillside slopes that naturally control and limit the vines' vegetative growth and yields, the Huailai County vineyards demonstrate great winegrowing potential year after year.

Due to the extreme cold conditions in the winter, the vines are covered under 40cm of earth during the long winter period from November until early April to avoid the buds being damaged by the frost.

The burial of the vines implies a specific training of the vineyards: pruning must be measured so that the trunk of the vine has enough flexibility to be bent over. Their is a gap maintained between the vines of around 3 meters to make sure there is enough earth to bury the vines.

This means that the density of the vines is low at around 3,000 per hectare.
